Easy Fresh Wholesome Guacamole

One of my all-time favorite summer meals! Guacamole is a tasty appetizer or meal (in my case :)) that contains only fresh wholesome ingredients and takes no more than 10 minutes to put together.

Packed with nutrients and flavor, guacamole is my go-to light meal during the summer time when the heat decreases my energy level and preparing food could seem a real challenge.  So on today’s scorching hot Friday I wouldn’t choose anything different for my lunch.

Ingredients:

1 large avocado

½ red onion

½ ripe tomato

A pinch of pink Himalayan salt

A dash of freshly grated black pepper

Zest of half a lemon

2 tbsp extra virgin olive oil

Instructions:

  1. Cut the avocado in half, remove the seed and with the help of a tablespoon scoop out the flesh onto your cutting board. Slice in cubes and place in a bowl.
  2. Using a fork mesh the avocado roughly to the texture you prefer. I like mine with a bit of chunkier pieces so that step didn’t take too long.
  3. Chop up the red onion and tomato in cubes (again my preference) – you can always mince them as finely as you like. Add them to the avocado in the bowl.
  4. Flavor with a pinch of pink Himalayan salt, freshly grated black pepper, the zest of half a lemon and some extra virgin olive oil.

There are numerous variations of guacamole – feel free to experiment with adding chili peppers, pomegranate seeds, pineapple, mango, humus, sweet potato, quinoa or just substitute the lemon for lime juice :)
